VERY NICE IDEA! I always cover the side of my cheesecake with the same way you do it. But i never made it with those beautiful patterns. I shoud try it one time. Oh I have this one tip to cover the seams. Once I overlap it (which you also do, as you mentioned), I then get a damp hot papertowel and just rub it through the seams. The chocolate will melt together, making it look like it was never attached. Keep it up. I love watching your videos

wow! i’m going to try that collar (but on a much shorter cake). did you pipe the design first and then lay the chocolate over that?
